oleoresin
Oleoresins are concentrated liquid or semi-solid extracts made from spices and herbs. The raw plant material is treated with a solvent such as ethanol, acetone, or ethyl acetate, or with supercritical CO₂, and the solvent is then removed. What remains holds both the volatile essential oil, which carries the aroma, and the non-volatile resinous and oily fraction, which carries pungency, colour, and body. Compared with ground spices, oleoresins have a standardized strength, a consistent flavor, a longer shelf life, and a lower microbial load. They also take up less storage space and are easier to dose, which is why food, pharmaceutical, and cosmetic manufacturers use them widely.
The spices on your list each have a characteristic active compound. Ginger owes its heat to gingerols and shogaols, and black pepper to piperine, while white pepper, made from peeled berries, is similar but milder. Clove bud is rich in eugenol, cinnamon in cinnamaldehyde, cumin in cuminaldehyde, and oregano in carvacrol and thymol. Nutmeg contains myristicin and sabinene, cardamom has cineole and terpinyl acetate, and garlic gets its pungency from sulfur compounds derived from allicin. Garden mint is known for menthol or carvone, depending on the variety. These extracts are used in meat products, sauces, seasonings, snacks, beverages, and confectionery, and some, such as ginger, clove, and oregano, are also valued in traditional and pharmaceutical products for their antimicrobial and digestive properties.
